Dried Cranberry and Apple Chicken Wraps
  • 2 Boneless Skinless Chicken Breast Halves
  • 1 Egg, beaten
  • 1 cup Panko Breadcrumbs
  • ½ cup Great Lakes Pinenuts or Walnuts, finely chopped
  • 1 teaspoon Garlic Powder
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • ¼ teaspoon Chili Powder
  • ¼ cup Mayonnaise
  • ¼ cup Sour Cream or Plain Yogurt
  • 2 Tablespoons Honey
  • 1 Tablespoon Whole Grain Mustard
  • 3 Tablespoons Great Lakes Dried Cranberries
  • Large Flour Tortillas
  • Lettuce or Spinach
  • 2 Apples, chopped or sliced
  1. Cut chicken breasts into strips. Mix breadcrumbs, nuts and seasonings in a shallow dish. Dip chicken strips into egg and then dredge in crumb mixture. Place on greased baking sheet. Bake at 375 degrees for 15 minutes. Mix mayonnaise, sour cream, honey, mustard and cranberries together. To assemble: place lettuce, chicken cranberry spread and apples across the center of a tortilla. Fold the sides in and enjoy! Makes 4.
